The vineyards of Niccolò Lari's winery, spanning 5 hectares at an elevation of approximately 175 meters, are proof to his commitment to organic and biodynamic principles. Cultivating traditional Tuscan grapes such as Sangiovese, Trebbiano, Merlot, and Canaiolo, the winery's practices are minimally invasive, preserving the vitality and expressiveness of the territory. Niccolò's staunch opposition to chemical or synthetic products reassures you of the wines' natural and authentic quality. This commitment to nature extends to the cellar, where the focus remains on spontaneous fermentations and the absence of invasive processes like filtrations and clarifications.

- Niccolò Lari.The "Beatnik" is a nonconformist and heretical macerated white wine, a rebellious creation that defies traditional winemaking norms. It is made from 100% Trebbiano grapes from organically cultivated vineyards. The grapes are carefully handpicked, and after pressing and destemming, the must is naturally fermented with indigenous yeasts, in contact with the skins in concrete vats for at least 10 days. No clarification or filtration processes are carried out before bottling. The Beatnik has a golden yellow color and is characterized by aromas of exotic and candied fruit. Its taste is intense, with light mineral notes, well-balanced acidity, and tannins. A young and crunchy expression of Sangiovese, which focuses above all on the primary aromas of the grape.
Pure Sangiovese, obtained from old vineyards, courageously recovered by Niccolò Lari on the hills of Malmantile in the province of Florence. The color is a clear, transparent garnet red. The olfactory notes open generously and seductively: floral notes, in the first instance, of sweet violet and red rose; notes of fresh red fruit, small red fruits, wild strawberries, raspberries, fresh cherries, blood oranges; spices such as pink pepper and cinnamon. Freshness dominates the palate, with substantial noble tannins that are perfectly integrated and elegant. Balanced and relatively persistent, it is a lively wine with good complexity. The pairing? Dare to try a soup based on fish or shellfish, slightly lowering the temperature of the wine.
